Quick and tasty: Prawns stir fry

Starters are the heart and soul of any party. Most people think that these dishes take time but in reality these are super easy to make. Cutting and chopping of the ingredients may take more time than the actual cooking itself. I tried my hand at one of the all time favourite - prawns stir fry!!
Stir fry is a technique where we heat the oil super hot and then quickly fry stuff in it while stirring them. Too much the ingredients will burn; too little you will end up with raw food. A bit tricky but worth the taste, so let's start cooking.
Prawns Stir fry: Guess it's an all time favourite of everyone, kind of an oriental style cuisine so preparation takes a bit of time. It has a bit of spicy flavour to it but you can ticker the spices to your taste.
Ingredients: Prawns ( de-veined and cleaned) - 250 gms; Chilly sauce - 2 tbsp ( I had Ghost pepper so there were only few drops used !! ); Soy sauce - 1 tbsp ( Use light soy sauce as it will good texture. My preparation was a bit darker because I used dark soy sauce.) ; Honey - 1 tbsp; Coriander leaves ( finely chopped) - 1/4 cup; Corn starch - 1/2 tsp; Oil - 4tbsp; Spring onions ( chopped and greens kept separately)- 2 stalks; Garlic ( finely chopped)- 8 cloves; Ginger ( julienne) - 2 inch; Dry red chillies ( halved) - 5; Salt as required
Steps:
i. Add oil into a wok and heat it.
ii. Add garlic and ginger and saute it for 2 minutes.
iii. Add the spring onion stalks and saute well.
iv. Add prawns and saute it for a minute; stirring continuously so as not to burn it.
v. Add all the other ingredients and stir continuously; corn starch will help prawns to coat uniformly in the spices.
vi. Add salt to taste; prawns should not have any water left and should be ready in 2-3 minutes.
Serve hot and enjoy!!!
