Eid mubarak: Shahi tudka to sweeten the day

Eid was last Monday but celebrated in a very different way this time. Safety is more important but still everyone tried to make sumptuous dishes to celebrate with their family and closed ones. So what better dish than shahi tudka to celebrate Eid in this lockdown!!! It requires minimal number of ingredients and doesn't require a lot of culinary expertise. As I didn't want to use a lot of sugar so made a milk syrup to sweeten the breads. So let's start cooking!!!


Ingredients: Bread ( sides removed and diagonally cut) - 6 pieces; For milk syrup: Milk - 1.5 cups, Sugar - 1 cup, Saffron milk - 5 saffron strands in little warm milk, Cardamom powder - 1 pinch, Fennel - 1/2 tsp; For rabri :left over full fat milk from 1 ltr can, Cardamom powder - 1/4 tsp; Nutmeg - 1 pinch; Ghee -5 tbsp for shallow frying the breads; For garnish : Rose petals, Saffron milk, Pistachio flakes, Mango - small dices, Saffron - 4 strands in warm milk


Steps:

i. Heat a fry pan with ghee and fry the breads on both side until golden brown. Ensure that bread pieces don't get burned. You can first use half of the ghee to fry first batch and remaining for the second batch



ii. Spread the breads over paper towels

iii. Now to prepare the milk-sugar syrup heat milk in the same pan with all the other ingredients

iv. Once milk is heated, lower the flame and add the bread pieces in the syrup to soak the sweetness. Don't keep the breads in the syrup for too long as they will get mushy

v. Stack the breads in 2s in a bowl and sprinkle a bit of nutmeg and cinnamon powder over them

vi. For rabri you can keep the remaining full fat milk on a separate pan and let it simmer on a low heat. Once the milk skin is formed just move it to the sides and stick it to the pan



vii. Add the left over milk syrup to the rabri milk once the mixture has reduced to half and keep stirring as in point vi

viii. Once the milk has reduced to 1/3rd and the milk is also pretty thick, switch off the flame and scrape off all the milk skin attached to the sides

ix. Mix well and pour it over the breads so that they can soak the rabri

x. Put the shahi tudka in fridge for 2-3 hrs


Garnish with the suggested ingredients and enjoy!!!
