Ghar ki thali: make flavorsome food with few ingredients

In the current scenario of lock-down it is possible that one cannot get all the ingredients and one have to improvise . It also helps one in finding new ways of cooking with few ingredients and pack them with flavour.
Ghar ki daal: It is a really simple version of toor daal that can be prepared really fast and requires very few ingredients.
Ingredients: Toor daal - 3/4 small bowl ( soaked for 2 hrs); Turmeric - 1/4 tsp,Asafoetida - 1 pinch,Salt to taste, Water - 4 small bols; For tadka: Ginger ( finely chopped) - 1 inch, Garlic pods ( finely chopped) - 6, Cumin seeds - 1 tsp, Ghee - 1 tbsp, Green chilli ( finely chopped) - 2, Coriander leaves ( finely chopped) - 2 tbsp

Steps:
i. Wash the daal and add all the things in a pressure cooker and cook at low flame for 2 whistles. Let the cooker de-pressurize naturally.
ii. Heat ghee in a tadka pan. Add cumin first.
iii. Once it starts sputtering add chilli, ginger and garlic.
iv. Add the tadka to daal once garlic and other tadka ingredients has cooked enough.
v. Add chopped coriander and mix well.
Baigan bharta: An all time favourite in north India, it doesn't require a lot of ingredients and cooks really fast but whatever ingredients are mentioned are really important to make it tasty and yummy.
Ingredients: Brinjal ( round ones) - 2; Garlic pods - 12; Onions ( finely chopped) - 2 big; Ginger ( finely grated) - 1 inch; Green chillies ( finely chopped) - 3; Tomatoes - 2 big; Coriander ( finely chopped with stem) - 3 tbsp; Peas - 1/2 cup; Turmeric powder - 1/2 tsp; Red chilli powder - 1 tsp; Mustard oil - 2 tbsp+ for brushing; Salt to taste

Steps:
i. Slit the brinjals and put in the garlic pods
ii. Brush the brinjals and tomato with mustard oil and roast
iii. Once the brinjals are well roasted peel off the skin and mash brinjals and tomato well
iv. Heat mustard oil in a wide pan and add onions, ginger and green chilli
v. Saute well, you can add salt to sweat out the onions
vi. Once they are well sauteed add peas and mix well for 5 mins
vii. Add the turmeric and red chilli powder and mix well for 2 mins to saute the dry spices
viii. Add the mashed brinjals and tomatoes and mix well for 5 mins
ix. Add the chopped coriander and serve hot
