Remy the Chef: Ratatouille

All of us have watched the famous Pixar movie 'Ratatouille' and have fallen in love with the 'rat chef'. Actually the name of the movie itself means a french dish. If you remember the ending where Remy cooks a dish for the food critic Anton Ego; it's a variation of ratatouille called 'Confit byaldi'. Pretty easy to make and super healthy ; so let's start cooking.
Confit byaldi: It' a variation of traditional dish ratatouille by Michel Guérard. It involves basic ingredients but tastes great.
Ingredients: White onion ( thinly sliced) - 1; Red bell pepper ( roasted) - 1; Zucchini ( green and yellow; thinly sliced) - 1 each; Japanese eggplant ( thinly sliced) - 1; Tomatoes ( blanched and thinly sliced) - 4; Garlic cloves ( finely chopped) -12; Rosemary - few twigs; Salt and pepper as per taste; Olive oil - 1/4 cup
Steps:
i. Saute the onions, garlic, red bell pepper and sides of the veggie which were left after thinly slicing them. Continue stirring until all ingredients turn soft and translucent. Add salt and black-pepper as required.
ii. Let the mixture cool for 10 minutes and then blend it to a fine paste. Add salt , black pepper , few leaves of rosemary and 1/2 of olive oil while blending. While the mixture is cooling pre-heat an oven to 150 degree Celsius.
iii. Spread the sauce on the base of the baking tray.Don't put a very thick layer, only enough to prevent the veggies from burning from the bottom in the oven.
iv. Start lining the sliced vegetables by alternating between different colors. You can use a circular pan or a rectangular baking tray .

v. Sprinkle olive oil over the veggies and add few rosemary leaves. Add salt and black-pepper as per taste.
vi. Cover the baking tray with a parchment paper or aluminum foil. To allow air circulation puncture a hole in the middle of the covering.
vii. Cook in a pre-heated oven for around 100 minutes.
Serve in a flat dish by using a ring mold for illustrative purposes and enjoy!!!
